Step 1
Pre-heat oven to 350°. Grease a loaf pan with non stick spray or butter.
Step 2
Microwave the stick of butter in a large bowl until melted.
Step 3
Add the banana to the bowl and mash with a fork.
Step 4
Add vanilla and egg to the bowl. Continue to mash and stir with fork until no yolk streaks remain
Step 5
In a different medium size bowl, stir together the dry ingredients. (Flour, sugar, baking soda, salt, and cinnamon).
Step 6
Add the dry ingredients to the wet ingredients and mix with a spoon or a spatula until combined well.
Step 7
Pour the batter into the loaf pan. Bake for about one hour. Check the center with a toothpick for doneness. It will be dark and cracked on top and should not jiggle.
