Ingredients

80gonions
shallots or leeks chopped
400gbroccoli
roughly chopped, you use the leaves & stem also
1 Tbspfresh turmeric root
scrubbed & finely chopped, or a teaspoon of dried
1 Tbspfresh ginger
peeled & finely chopped
2garlic cloves
peeled & finely chopped
2 Tablespoonsvirgin coconut oil
2 cupsbone broth
or veg broth or water
½ cupcoconut milk
or cream, plus extra to garnish if desired
Salt
pepper
to taste or fish sauce or tamari
2 Tablespoonslime juice
to taste
water
to thin, if necessary
Instructions
Step 1
Firstly add you coconut oil to a fry pan & gently sauté your onion, broccoli, ginger & turmeric until glossy before adding your garlic so that is doesn’t burn & become bitter. Season with salt & pepper then add your bone broth to simmer & cook all the veg until soft. Cool slightly & transfer to a blender or food processor, along with your coconut milk or cream, coconut vinegar or lime for brightness & puree till smooth. Taste & adjust seasoning as necessary. Enjoy the simple things!
