Step 1
Place a large saucepan over medium heat and add the olive oil.

Add the onion, garlic, and ginger and saute for about 4 minutes or until softened.
Step 3
Stir in the cauliflower, sweet potato, chicken broth, coconut milk, and curry powder, and bring to a boil. Reduce the heat to low and simmer the soup for about 30 minutes, or until the vegetables are tender.
Step 4
Place in blender and puree until smooth.
Step 5
Top with cilantro.
