Step 1
Preheat oven to 200C.
Step 2
Mix the sweet potatoes in a roasting tin with garlic, ginger, star anise, oil and salt. Transfer to oven and roast for 20 minutes.
Step 3
Rub pork chops with Chinese five-spice, salt and oil.
Step 4
After the sweet potatoes have cooked for 20 minutes, place the chips on top and return to the oven and roast for 20-25 minutes.
Step 5
Scatter over finely sliced spring onions and season with soy sauce.
