Instructions
Step 1
Mix all the spices and add 1/4 to the buttermilk and the rest to the flour
Step 2
Coat your meat in the buttermilk and set in the fridge for at least an hour preferably overnight
Step 3
Coat in the dry mix and squeeze in the coating
Step 4
For chicken: fry at 160C for 4-7 minutes, or until breast reaches 65-70C or thighs and drums reach 85C internal
Step 5
For Halloumi: redact the salt from the original recipe as Halloumi is already salty enough. Fry at 180C for 2-3 minutes til coating becomes perfect golden colour
Step 6
For 1kg Turkey Drumstick, fry at 150C for 30-40 mins til internal temp reaches 75-80C
