7 ouncesall-purpose flour
2 tablespoonssugar
2 teaspoonsbaking powder
1 teaspoonkosher salt
½ teaspoonbaking soda
2 cupsbuttermilk
1egg

melted and cooled, plus more for serving

1 tablespoonvegetable oil
4ham steaks
large, each about 1/2 inch thick
pure maple syrup
warmed, for serving

hot, for serving
Instructions
Step 1
IN A large bowl, whisk together the flour, sugar, baking powder, salt, and baking soda.
Step 2
In a medium bowl, whisk together the buttermilk, egg, and melted butter.
Step 3
Make a well in the center of the dry ingredients, pour the buttermilk mixture into it, and gently whisk until just combined. The batter should still be lumpy.
Step 4
Cover and refrigerate for 30 minutes to 1 hour.
Step 5
SPRAY A large cast-iron or nonstick skillet with cooking spray and heat over medium to low heat for 5 minutes.
Step 6
Increase the heat to medium and pour ⅛ to ¼ cup of the batter (depending on how large you want your pancakes) onto the skillet.
Step 7
Cook for 1 to 3 minutes, until the edges of the pancake become dull, bubbles form on top of the pancake, and the bottom is brown.
Step 8
Flip the pancake and cook on the golden side for 1 to 2 minutes, until golden brown. Transfer to a plate.
Step 9
Repeat with the remaining batter.
Step 10
If desired, transfer the pancakes to a wire rack set on a rimmed baking sheet and keep them warm in a low oven (about 250°F).
Step 11
MEANWHILE, IN a large nonstick skillet, heat the vegetable oil over medium heat. Add the ham steaks and fry until browned on both sides and heated through, about 3 minutes.
Step 12
Transfer to plates, add the pancakes, and serve with warm maple syrup and melted butter and coffee, of course.
