Creamed Corn Pancakes

These tasty pancakes can be eaten alone or as a side with bacon, ham, eggs, or fried chicken. They can be made ahead and frozen for quick weekday meals as well. This recipe makes approximately 16 4" pancakes.

Step 1
Combine dry ingredients in large bowl
Step 2
In a medium bowl, whisk together milk, eggs, oil, and creamed corn.
Step 3
Pour wet ingredients into the large bowl and mix until fully combined.
Step 4
Pour 1/4 cup of batter per pancake into a preheated pan or onto a griddle. If using an electric griddle, set it to 375F.
Step 5
Cook until the top of the pancake begins to bubble and forms a skin then flip it a cook until done, about 5 minutes per side.
