Baked Broccoli Bites

These little veggie squares may be a controversial snack, but as someone who loves broccoli and the iron it provides, I had to make my own modified version of Josh Cortis' Broccoli bites. My only changes really include seasoning and adding more protein in the form of soybeans!

Step 1
First, boil your soybeans until soft. You could skip this step if you really wanted, but it might turn out quite dry.
Step 2
While the soybeans are boiling, cube your onion. I wash mine in cold water to reduce the acidity, but if you like the strong acidity of your onions, you can skip that step.
Step 3
Now we can move on to processing!
(You can also do all this with a knife if you don't have a processor, but it's gonna take a while and won't be as smooth, but whatever works for you ♡) Start by processing the broccoli. You'll want to process it in small amounts at a time unless you have some sort of god processor. You then want to add your onions and soybeans, and process until you have a very smooth mixture, adding the water and seasoning as you go.
Step 4
Once you have a dough-like consistency, spread your dough into a lined baking pan [11x17inch recommended]
Step 5
Freeze your dough for an hour and remove from pan.
Step 6
Cut into 48 even squares and bake. If you have an airfryer, it's recommended, but these can easily be oven baked or even pan fried if you aren't worried about oil.
Step 7
Bake for 30 minutes at 200°C, flipping halfway through.
Step 8
Once cooked, they can be served with any sauce of your choice (Pasta sauce, such as bolognese is recommend).
Step 9
Last step, enjoy your healthy little veggie snack! They can be stored for up to 3 weeks in the freezer in a zip lock or vacuum bag, and can be reheated easily in the oven or airfryer ♡
