Instructions

Step 1
Combine water, yeast, salt, both flours, poolish, cocoa powder, and molasses on a bowl and combine with a fork.
Step 2
Turn the bowl out onto the counter and Knead by hand with a bench scraper until combined and smooth.
Step 3
Add caraway seeds and Knead together until fully incorporated.
Step 4
Place dough in a greased bowl covered with a damp towel and proof for 30 min.
Step 5
Stretch and fold 4 to 5 times then tick into a ball to proud for another 90 min.
Step 6
Punch the dough down, lightly flour, and turn out onto a lightly floured counter. Stretch the dough into a rectangle and tightly roll towards yourself to shape the loaf.
Step 7
Put the dough in a greased loaf pan cover with a damp towel, and proof another hour and a half to two hours.
Step 8
Scour the top of the dough and bake at 460F for 15 min.
Step 9
Reduce oven to l temp to 400F and bake another 20 to 25 min.
Step 10
Cool on a wire rack before slicing.
