Instructions

Step 1
Core and dice apples into small bits, leave skin on.
Step 2
Dice onion(s).
Step 3
Add both to large pot.
Step 4
Pour on top brown sugar and salt.
Step 5
Dice up prunes and add to pot.
Step 6
Add malt vinegar and spices (ginger, allspice, cayenne pepper, and nutmeg).
Step 7
Bring to a boil and simmer with lid on for 10 minutes or until fruit is tender.
Step 8
Let cool slightly and blend with immersion blender.
Step 9
Put back on heat and simmer with lid off until thickens approximately 15-20 minutes. Add a dab to a cold plate to test thickness. Don’t want it as thick as jam.
Step 10
Best if stored for 10 days before use.
