once you try these i promise theyโll be a staple bake for any time you find yourself with spotty brown bananas. theyโre so good youโll find yourself leaving your bananas to become overripe on purpose just to make these!
tip:
this recipe can be made in a large measuring jug for less washing up and extra easy pouring into the cupcake cases.
try:
for a decadent twist either save one mashed banana from the mixture or grab another, and mix with icing sugar for a super sweet easy banana icing ๐ง

Instructions
Step 1
- preheat oven to 180 degrees fan

Step 2
- line a cupcake tin with cases ๐ง

Step 3
- mash bananas with potato masher or fork



Step 4
- melt butter in microwave and combine with mashed bananas


Step 5
- beat egg with vanilla extract and add to the mixture




Step 6
- add the sugar

Step 7
- sieve in self raising flour and baking soda



Step 8
- add as much cinnamon as your heart desires (optional)

Step 9
- distribute the mixture into the cases and pop in the oven for around 15mins, watching to see how golden the tops of the muffins are.
