once you try these i promise theyโ€™ll be a staple bake for any time you find yourself with spotty brown bananas. theyโ€™re so good youโ€™ll find yourself leaving your bananas to become overripe on purpose just to make these! tip: this recipe can be made in a large measuring jug for less washing up and extra easy pouring into the cupcake cases. try: for a decadent twist either save one mashed banana from the mixture or grab another, and mix with icing sugar for a super sweet easy banana icing ๐Ÿง

- preheat oven to 180 degrees fan

- melt butter in microwave and combine with mashed bananas

- beat egg with vanilla extract and add to the mixture

- add the sugar

- distribute the mixture into the cases and pop in the oven for around 15mins, watching to see how golden the tops of the muffins are.
