Instructions
SAUCE
Step 1

Start by washing the dry soy mince in cold water and straining it in a colander

Step 2

transfer the mince to a bowl and cover in boiling water (enough to submerge it)


Step 3

Cut up (in small diced pieces) the onion

Step 4

Next cut the courgette in thin two inch strips

Step 5

In a hot pan add some water (enough so nothing burns) and add the onion and courgette
Step 6

Let them cook until they soften slightly
Step 7

Add the seasoning (to taste) and cook off for about 2-3 mins , add more water if you need to

Add the soy and cook for another 2-3 mins (add more water if need to)
Step 9

Pour in the chopped tomato tin and let it simmer on low heat whilst you make the white sauce (turn the heat off after 4-5mins)

WHITE SAUCE
Step 10

In a small pan add in about 2tbs of water and the flour

Step 11

Stir (heat off) until there are no lumps

Turn the head on low and keep stirring until it becomes thick
Step 13

Pour in 1/8 of the milk and stir well, until it becomes a smooth paste

Add the rest of the your milk, and mix until it slightly thickens

Add the lemon juice, mix through

In a small bowl combine the cornstarch and some water (enough to make it runny)

Add it to the white sauce

Along with the seasoning (to taste)

Mix and Let it simmer until it thickens up
ASSEMBLING
Step 20

add a tiny bit of the bolognese to the bottom of the dish

Add the first lasagne sheet

Step 22

Scoop on about 1/3 of the bolognese ontop
Step 23

Followed by some white sauce
Step 24

Repeat the steps until everything is used up (the last layer should be white sauce)
Step 25

Add mozzarella on top and sprinkle over some mixed herbs


Step 26

Bake at 180 for 30-45 mins ( it should be a little runny but leave it to cool for 5 mins and it should be stable)
