Instructions

Step 1
1. Season chicken well with salt and pepper and place in the slow cooker. Add all remaining ingredients except cauliflower. Mix well 2. Cover and cook on high for 3-4 hours or on low for 7-8 hours, until veggies are tender and chicken is fully cooked 3. Turn off the slow cooker. Remove and discard bay leaves. Transfer chicken to large bowl and shred with two forks. 4. Return chicken to the slow cooker. Add cauliflower. Mix well. Cover and let sit for 5-10 minutes until hot.
