Instructions
Step 1
Fry thighs in olive oil in high heat
Step 2
Lower heat, add butter, cook pancetta til almost crispy. Add onion, mushrooms, and garlic, cook 3-5 minutes
Step 3
Put chicken back in pot, add thyme and half bottle wine. Bring to boil. then lower heat, cover, and let simmer for 30-40 minutes
Step 4
Remove thyme sprigs, pour in cup of cream and let boil, uncovered, stirring frequently until desired thickness
Step 5
Top with fresh parsley. Serve over cous cous or rice
