Instructions

Peppercorn Sauce

Step 1
In a small pot over medium heat, add half of the butter and sauté shallots for around 3-4 minutes.

Flambé with brandy.

Add green peppercorns and beef stock. Allow it to simmer until it reduces by 2/3, around 5-10 minutes.

Add the whipping cream and butter and season to taste.

Cornichon and Chive Mayo

Step 5
In a bowl, add mayonnaise, finely diced cornichons, shallots, chives, lemon juice, salt, and black pepper. Mix well.

Shoestring Fries

Step 6
Peel and Julienne 1 potato and add it to a bowl of cold water to rinse the extra starch off.

Remove the julienned potato from the water and dry off well with a paper towel.

Add the potatoes to a pot of oil heated to 350 F and fry until they are golden brown, around 2-3 minutes. Remove from oil and season with salt.

Patty

Step 9
In a meat grinder, grind sirloin, chuck, short rib, and beef fat. Season the meat mixture with salt.

Form 4 even patties with your hands and crust them in a generous amount of crushed black and pink peppercorns.

In a large pan over medium high heat, add a splash of oil and add patties. Cook for 2-3 minutes then flip. Cook the other side for another 2-3 minutes.
Step 12
While the patties are cooking, cut the brioche buns in half and spread a thin layer of butter on both sides. Toss into a pan over low heat and toast for around 2 minutes.

To put the burger together, spread a generous amount of the Cornichon and Chive mayo and place patty along with the shoestring fries. Serve with a side of the Peppercorn sauce.
