Instructions
Step 1
Sprinkle the salt over the garlic cloves on your cutting board and, with the flat side of a knife, press the garlic into a smooth paste. Set this aside.
Step 2
In a medium bowl, whisk the egg yolks until smooth and glossy, about 2 minutes. Whisk in the mustard. Whisk in the garlic paste. Whisk in the anchovy paste. Whisk in the lemon juice.
Step 3
While whisking continuously, slowly drizzle in the olive oil until it is incorporated and emulsified. Repeat this slow whisking process with the grapeseed oil, then keep whisking for another minute until the dressing is perfectly thick.
Step 4
Stir in the Parmesan and pepper, and try to forgive me for using the word "whisk* 10 times in 135 words. This is a whole reason to put chicken Caesar salad on your menu this week.
