Instructions
Step 1
For a marinade, add to a baking dish the zest of 2 lemons, juice of 1 lemon, 5 cloves of garlic minced, 1-2 T of dijon mustard, and 2 T olive oil
Step 2
Add chicken thighs to baking dish and season as you desire
Step 3
Mix chicken with tongs to get it coated thoroughly; let marinade for 1 hour in fridge
Step 4
Preheat oven to 350
Step 5
After 1 hour, add 1 1/2 c uncooked white rice (and double the amount of water) to baking dish
Step 6
Nestle chicken thighs on top/into watery rice mixture
Step 7
Bake at 350 for about 45 minutes or until chickne is 165 degrees
Step 8
Use leftover lemons as garnish
