Instructions
Preheat oven to 425F
Step 1
Adjust racks to middle & top. Lightly oil sheet pan.
Potatoes
Step 2
In a large bowl, toss potatoes with 2T oil with ample salt & pepper until thoroughly coated.
Step 3
Add potatoes to one side of prepared pan, shingling them in single layer (so they cook evenly.)
Step 4
Roast on middle rack (10 min.)
Meatloaf
Step 5
BBQ Glaze: In sm. bowl, combine BBQ sauce & chili powder. Taste & season with salt.
Step 6
In lg. bowl, soak panko with 2t water (until absorbed.) Add beef, scallion whites, garlic, BBQ Seasoning, ¼t chili powder, salt & pepper.
Step 7
With hands coated with water or oil (to prevent sticking), form into two 1”-tall loaves.
Green Beans & Assembly
Step 8
Toss green beans with a drizzle of oil, salt, & pepper.
Step 9
Once potatoes have roasted, carefully place green beans on empty side. Place meatloaves next to green beans.
Step 10
Brush tops of meatloaves with 1T BBQ glaze each (save the rest for later). Transfer to top rack; roast (15 min.)
Scallion Crema
Step 11
In sm. bowl, combine sour cream with half of scallion greens; season with salt & pepper. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.
Step 12
Plate & drizzle potatoes with scallion crema; serve with remaining BBQ glaze.
