Instructions

Step 1
Mix the diced apple, vanilla sugar and cinnamon together in a mixing bowl. Stir so the apples are well coated and leave to stand for a couple of minutes.
Step 2
Divide the mixture between four microwave proof bowls. Microwave on high for one minute, or until the apples are slightly softened.
Step 3
Crush four shortbread biscuits until they resemble breadcrumbs. Spoon the biscuit crumbs over the apples and serve as is, or with scoops of vanilla ice cream.
