Instructions
Step 1
Marinate the prawns in the juice and zest of one lemon, salt and pepper.
Step 2
Roast the tomatoes for 12 mins at 240 fan with 2 unpeeled, squashed garlic cloves and olive oil and season.
Step 3
Julienne and fry courgettes in olive oil, seasoning heavily, 5-6 minutes, then remove.
Step 4
Fry the garlic and chilies in the olive oil and butter, for one minute.
Step 5
Stir in the prawns, cook for two minutes.
Step 6
Stir in the cherry tomatoes cook for one minute.
Step 7
Stir in the courgetti and warm through, one minute, with a fistul of parmesan.
Step 8
Serve with plenty of seasoning and grated Parmesan.
