Beef Pot Pie

Ingredients
6 servings
2.5 poundsboneless beef chuck eye roast
trimmed and cut into 3/4 inch cubes
salt
black pepper
3 tablespoonsvegetable oil
4 ouncescremini mushrooms
trimmed and quartered
1onion
chopped
2carrots
peeled and cut into 1/2-inch pieces
2 tablespoonstomato paste
1 tablespoongarlic
minced
½ cupred wine
3 tablespoonsall-purpose flour
1 ½ cupsbeef broth
1 heaping tablespoonbeef flavor
dissolve in 1/4 cup boiling water
1 tablespoonsoy sauce
1 tablespoonWorcestershire
½ teaspoonsugar
1bay leaf
1 cupfrozen petite peas
2 teaspoonsfresh thyme
chopped
Beef Rub
Instructions
Step 1
Season meat with beef rub.
Step 2
Stir in mushrooms, onion, and carrots, and saute with some beef rub until vegetables are softened for about 5 minutes. Scrape up any browned bits. Add tomato paste and garlic. Cook and stir constantly, until fragrant.
Step 3
Pour in the wine and continue to cook until liquid is evaporated for about 2 minutes.
Step 4
Sprinkle flour over vegetables are stir to coat.
Step 5
Add broth, Better Than Bouillon and water, soy sauce, Worcestershire, bay leaf, and sugar until combined.
Step 6
Add browned and raw beef and bring to simmer. Cover and place in the oven. Cook until beef is tender, about 1 1/4 – 1 1/2 hours.
Step 7
Stir in peas and 1 teaspoon chopped thyme.
Step 8
Brush the rim of the pie plate and the interior lip of the pie plate with egg.
Step 9
Place pie crust over filling so dough overhangs edges of pie plate slightly. Fold overhanging pie dough inward so folded edge is flush with the inner edge of the pie plate. Crimp dough evenly around the edge of the pie using your fingers.
Step 10
Make a 1/2-inch hole in the center of the pie. Cut six 1/2-inch slits around the hole, halfway between the center and edge of the pie. Brush the crust with the remaining egg, then season with salt, pepper, and remaining 1/2 teaspoon chopped thyme.
Step 11
Place pie on a rimmed baking sheet and bake until crust is golden brown, about 30 minutes.
