cooked and cubed
½ cupcucumber
sliced
2 headsromaine lettuce
chopped
2figs
large, sliced
3 tablespoonsavocado oil
or melted coconut oil
apple cider vinegar
1 tablespoonleek
finely chopped, or green onion
1 tablespoonfresh dill
chopped, or 1 teaspoon dried dill weed
sea salt
or pink himalayan sea salt
pepper
to taste
Instructions
Step 1
In a large bowl combine the chicken, cucumber, lettuce, and figs.
Step 2
In a small bowl, whisk the oil, vinegar, leek, and dill.
Step 3
Pour the dressing over the salad, season with salt and pepper, toss, and serve.
