Ingredients

For the Crust

1 sleevegraham crackers
crushed very fine

6 Tbsbutter
melted

⅓ cupbrown sugar

1 tspnvanilla extract

0.5 tspnsalt

cinnamon

For the Filling

2cans sweetened condensed milk

6egg yolks

1 cupkey lime juice

1lime
zest from

salt

1 tspnvanilla extract
or one scraped vanilla bean

For the Crust
Step 1
-Set the oven to 350*F and line a 9 inch spring form pan with parchment on the bottom.
-Mix all ingredients well in a bowl then place in springform pan. Using the back of a measuring cup or other flat surface, press the crumb well and evenly to create a compact crust layer.
-Bake for 7 minutes, then remove from oven and drop the oven temperature to 300*F




For the Filling
Step 2
-Whisk together all ingredients in a large bowl, then pour over prepared crust.
-Bake at 300* for 45 minutes to one hour, or until middle is just barely set and the pie still jiggles a bit when shaken.
-Turn off the oven and prop it open with a kitchen towel or wooden spoon and allow to cool for 30 minutes, then move to fridge to cool for at at least 2 hours, ideally overnight.



For the Topping
Step 3
-Whip the cream with the powdered sugar and grand marnier until stiff peaks are achieved, then decorate as desired.
-Top with diced strawberries just before cutting for service.
