Instructions

Step 1
Coat meat in flour and season, Fry on both sides until nicely browned and caramelised. Remove from the pan and set aside.
Step 2
cook the shallots, carrot, celery and garlic until tender. Add the red wine I’d have ir and simmer until the wine has evaporated. Return the meat to the pan and add the tomato puree, tomato paste and beef stock. Add the rosemary and season with salt and pepper.
Step 3
Reduce the heat, cover and allow to simmer for 2 hours in oven or until the meat is tender and the sauce is deliciously rich
