Mushroom scrambled eggs with ham

Doing some simple scrambled eggs and adding mushroom may seem simple, but after being a household favorite for my family, I hope you appreciate my take on them. Prepping for this is very easy, you can get everything ready a little bit ahead of time. Or reduce cleanup and use a single bowl, by using the time while your onions cook down, and later when your mushrooms are browning. Just remember to not let raw onion or mushrooms sneak into your eggs, and ruin the texture of everything.

Instructions

Prepping

Step 1
Cook your ham by your preferred method, if you didn't buy a precooked one.
Step 2
To maximize this dish, I recommend you chop your onion into batons, opposite to the rings. This has the secondary benefit of making you cry less, but you actually should do it for the amazing texture it gives to the dish.
Step 3
Slice your mushrooms, and toss them in a bowl with black pepper and salt to make sure they're well coated. You can use the onion bowl after you add them to the pan, you shouldn't rush the onions anyway.
Step 4
In a bowl, mix your eggs with the diced ham you previously cooked, I actually recommend you use a fork, since you only need to break to yolks, not whisk, so this makes clean up easier. You can use the mushroom bowl after you add them to the pan, again... No rush.

Start cooking

You will add your oil to your pan, and start at a medium-low heat. While it warms up, toss your sliced onions with 2 teaspoons of salt, and make sure they're well coated. Once the pan is warm, add your onions.

Add your mushrooms when your onions are soft, but not brown yet.

Stir enough to make sure nothing burns.
Step 8
Pour your eggs and ham, at this point it's just like making any scrambled eggs. Cook everything down while making sure you move it with your spatula from the edge to the center, to make sure the eggs cook evenly.
Step 9
Preferably before your eggs finish cooking, add your chopped basil, and more black pepper if you want.
Step 10
Once you cooked your scrambled eggs to your preferred doneness, it's ready to serve.
