Instructions
Step 1
Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350 degrees. Prepare loaf pans with butter or cooking spray.
Step 2
Mix sugar and butter in a large bowl.
Step 3
Stir in eggs until well blended.
Step 4
Add bananas, buttermilk, and vanilla. Beat until smooth.
Step 5
Stir in flour, baking soda and salt just until moistened.
Step 6
Stir in nuts or chocolate chips.
Step 7
Divide into 2 bread pans or into muffin tins.
Step 8
Bake loaves for approximately 1 hour or until toothpick inserted in center comes out clean.
If using muffin tins, bake small muffins for 18 minutes per batch and large muffins for 25 minutes per batch.
Step 9
Cool for 5 minutes on a wire rack then loosen the sides of the loaves from the pans and remove bread from pans. Cool completely before slicing.
