Instructions

Step 1
Add 7 egg yolks to a medium sized bowl
Step 2
Add 180 grams of sugar and a pinch of salt and Whisk until combined
Step 3
In a medium sized pot add 355 milliliters of full fat milk then add 540 milliliters of heavy cream
Step 4
Heat the mixture until steamy *no boiling!* then add a bit of the mixture to the eggs to temper
Step 5
Add the eggs to pot and proceed to cook until it begins to thicken
Step 6
Add the mixture to the ice cream machine to churn until complete
