Olive Oil Vegetable mix

Very simple mix of vegetables and herbs that can be easily adapted and can add a lot of flavour. Delicious to add with anything such as fish, pasta, on bread etc.

Instructions

Step 1
Crush and chop garlic clove (to size of choice)
Step 2
Slice/Chop pepper, tomatoes, onion and olive to size of choice - the longer the vegetables are left to soak in the olive oil the softer they will become so they do not need to be finely cut if you prefer to add texture
Step 3
Add all ingredients to bowl
Step 4
Add 6-8 tbs of olive oil (to choice)
Step 5
Add pepper, salt, squeeze of lemon juice to choice - and mix in the bowl
Step 6
This can be eaten/added to dishes straight away, or can be left for a couple of hours/overnight where the flavours of the olive oil, herbs and vegetables combine.
Step 7
Splash of vinegar and basil can also be added for choice.
Step 8
Add to meal/snack of choice! If adding to pasta, it can be great to add both the olive oil vegetable mix and pasta in a pan, with sauce and under a low/medium heat to combine the flavours
