Air Fryer Roast Vegetables

There’s something wonderfully comforting about a tray of roasted vegetables. They’re sweet, caramelised, and full of flavour. This air fryer version is a brilliant shortcut to that oven-roasted taste in a fraction of the time. With colourful peppers, soft courgette, juicy beef tomato and sweet onion, this medley is a simple way to make the most of fresh produce.

Ingredients
2 servings

1red pepper
deseeded and cut into chunks

1green pepper
deseeded and cut into chunks

brown onion
peeled and cut into wedges

1courgette
halved lengthways and sliced into half moons

1beef tomato
cut into wedges

1 ½ Tbspolive oil

½ tspdried oregano
or thyme

salt
to taste

black pepper
to taste

1garlic clove
Optional, finely sliced or crushed

Balsamic glaze
Optional, or lemon juice, to serve
Instructions
Step 1
Preheat your air fryer to 190°C (375°F), if your model requires it.
Step 2
Add the peppers, onion, courgette and beef tomato to a mixing bowl. Drizzle over the olive oil, sprinkle in the herbs, garlic (if using), and season well with salt and pepper. Toss everything together until evenly coated.
Step 3
Tip the vegetables into the air fryer basket in a single layer (or as close as possible). Cook for 15–18 minutes, shaking the basket halfway through, until the veg is tender and lightly charred in places.
Step 4
Taste and adjust the seasoning if needed. Finish with a drizzle of balsamic glaze or squeeze of lemon juice, if desired.
