Chicken goujons with Parmesan crumb

Instructions

Step 1
Preheat the oven to 200°C fan 180°C/Gas
Step 2
Line a large baking tray with non-stick baking paper.
Step 3
Whisk the egg in a medium bowl until smooth.

Combine the Parmesan,

polenta, thyme and paprika with some fine sea salt and a good grinding of black pepper in a separate bowl
Step 6
Scatter half the mixture over a large plate.
Step 7
Dip the chicken strips.
Step 8
one at a time, into the egg then cont in the Parmesan crumb.
Step 9
Top up the crumbs on the plate when the first batch is used up.
Step 10
Place the goujons on the baking tray and bake for 12–14 minutes, or until crisp,

golden brown and cooked through.
Step 12
Divide between two plates and serve with a squeeze of lemon.
