Step 1
Preheat oven to 400°
Step 2
Wash potatoes
Step 3
Rub 2 tbsp olive oil over the potatoes. Season with salt and pepper. Place on a baking sheet and bake 1 hour or until potatoes are soft inside

Cut the potatoes in half and scoop out the insides, get as close to the skin as possible but don’t go all the way through, leaving a some potato flesh
Step 5
Brush remaining olive oil inside the potatoes and season with salt and pepper and bake 5 minutes
Step 6
Fill the potatoes with 1-2 tablespoons cheese, then 2 tablespoons warm chili and 1-2 more tablespoons cheese. Bake until cheese is melted, about 5 minutes
Step 7
Garnish with sour cream, sliced green onions and Fritos
