Instructions
Step 1
Cook strawberries, maple syrup, lemon zest, lemon juice in a saucepan on medium heat.
Step 2
Smash the strawberries with a spoon to allow them to breakup slightly.
Step 3
Allow to boil for 10minutes.
Step 4
Make sure to stir regularly.
Step 5
Add the chia seeds and cook for an additional 5 minutes. Stir frequently. The mix will start to thicken.
Step 6
Remove from the heat. Add the irish moss gel. All to cool for at least 10 minutes.
Step 7
Pour into a glass mason jar.
Step 8
Close tightly and store in the fridge for no longer than 1 week or freeze for 2 months.
