Instructions
Banana Cream Pie Filling
Step 1
Whisk milk, vanilla, & pudding together until combined & slightly thickened (2-3 min.)
Step 2
Fold in whipped topping & chopped bananas. Cover in plastic wrap; chill in fridge while making cookies.
Preheat oven to 350°F
Step 3
Line baking sheet with parchement paper; set aside.
Step 4
Cream butter, oil & sugars in lg. mixing bowl.
Step 5
Add egg & vanilla butter emulsion; mix until combined.
Step 6
Add flour, salt, & baking powder; mix until combined. Use lg. cookie scooper to scoop out 9 equally-sized cookie balls. Place them on prepared baking sheet & gently flatten to about 1”-thick; using ¼C measuring cup, press down center of cookie to make a well for filling.
Step 7
Bake (10 min.); cool completely on baking sheet.
Step 8
Once cookies cool, top with banana pudding mixture, Nilla wafer crumbs, & a mini Nilla wafer. Enjoy!

Step 9
Store in air-tight container in fridge (up to 4 days.) Since they are supposed to be served chilled, pull right out of fridge & enjoy as is (no need to let them warm up.)
