Sfincione is the typical focaccia from Palermo.Made with few ingredients is the alternative to the pizza. The differences are on the tomato sauce that need to be cool slowly with onion and anchovies fillet. A sprinkles of Caciocavallo cheese and breadcrumbs will complete this delicious typical Palermo street food.

Mix all the ingredient and kneading for 10 minutes. After that slap and fold the dough every 15 minutes at least 3 times and let it rise till double in sizes. Depend of the yeast you are using this process will take between 2 hours or 8 hours depend also of the temperature of the room. When the dough is ready take it and put on a blue iron tray or in alternative the oven tray and shape till cover all. Let it rest and grow again for the second time. In the mean time you can prepare the sauce. In a saucepan melt 5 anchovies fillet with olive oil , cut one onion in julienne and put on the saucepan on low heating . After 10 minutes put the tomato sauce and cook at least for 2 hours. When the dough is ready cut pieces of Caciocavallo Cheese in small squares and put inside the dough together with small pieces of anchovies based to your taste. Cover all with the tomato sauce and put in the oven at 250 degrees static for 20 minutes. After that time take out from the oven and sprinkle grated Caciocavallo and breadcrumbs on the top, finish with olive oil and put back in the oven for another 10 minutes.
