Preparation
Step 1
Pre-heat the oven to 180oC.

Step 2
Heat a pan of boiling water for the macaroni.
Step 3
Grate the cheddar.
Step 4
Drizzle the breadcrumbs with 1/2 tbsp of oil.
Step 5
Cut the cauliflower and broccoli into small florets. Place into a large oven-proof dish and drizzle with 1tbsp of olive oil. Season with salt and pepper. Roast for 20-25 minutes.
Step 6
Cook the macaroni according to the pack instructions, for approx. 2 minutes less than the required time.
Make the cheese sauce
Step 7
Melt the butter in a saucepan on a low heat and gradually add the flour whilst whisking to create a smooth paste.
Step 8
Pour in the milk, bit by bit, whisking continuously to create a creamy and smooth sauce.
Step 9
Add the cheddar to the sauce along with the mustard, nutmeg and paprika. Season with salt and pepper to taste. Stir until the cheese has melted.
Assembly
Step 10
Remove the cauliflower and broccoli from the oven. Tip in the cooked macaroni, and the cheese sauce and stir until evenly combined.
Step 11
Top with the breadcrumbs and bake in the oven for 20-25 minutes until golden brown on top.
