I am obsessed with the caramel brûlée latte at Starbucks, and decided to turn it into a cookie! This is basically a sugar cookie, with caramel chips and instant coffee - and then a cream cheese frosting, torched with granulated sugar. This is SO good

For the cookie dough
2 cupsflour
1 tspbaking soda
½ teaspoonbaking powder
1 cupbutter
softened
½ cupwhite sugar
¼ cupbrown sugar
1egg
1 teaspoonvanilla extract
1 ½ Tbspinstant coffee
½ cupCaramel chips
or more to taste
For the brûlée frosting

Step 1
Preheat the oven to 375 degrees F

Stir flour, instant coffee, baking soda, and baking powder together in a small bowl.

Beat sugar and butter together in a large bowl with a mixer until combined. Add in egg and vanilla and mix. Slowly blend in the dry ingredients. Once the dough is ready, add in caramel chips.

Roll dough into small balls and place on the baking sheet. Bake for 8-10 min

Make the frosting by beating the cream cheese until it’s smooth. Add powdered sugar and vanilla and mix until combined.

Spread about half a tablespoon of frosting on each cookie, sprinkle granulated sugar on top. Before serving, use a kitchen torch to brûlée the sugar on top!
