Step 1
Beat together butter and sugar.
Step 2
Add eggs one at a time, slowly mixing through.
Step 3
Sift in the self-raising flour and add the lemon zest, mix until well combined.
Step 4
Spoon the mixture into a loaf tin (8x21cm) .
Step 5
Bake for 45-50 mins at 180°C.
Step 6
For the drizzle, mix the lemon juice and sugar.
Step 7
Prick the warm cake, then pour over the drizzle.
