Shrimp Zoodle Bowl
I enjoy making “look-alike“ recipes for myself, re-creating things that I might enjoy when dining out. There is a restaurant called Yard House that I enjoy and I typically order the Shrimp Zoodle Bowl. The original recipe calls for white wine but I substitute chicken or vegetable broth in lieu of. I really like the freshness that the basil and lemon offer and the spice of the crushed red pepper flakes. I hope you enjoy it as much as I do!

I pan fry my shrimp in the olive oil, adding a nice “char”. At this point I toss in the halved grape tomatoes, offering them an opportunity to reduce/soften. I add the broth, lemon juice, garlic and basil and let the flavors meld together. I personally enjoy my spiralized zucchini more “al dente” therefore I add that in at the very end of my cooking. I will sometimes cover my pan to allow the “steam effect“ to take place but not too long because I don’t want soggy zoodles. I plate it and garnish with the parmesan cheese and crushed red pepper flakes.
