300gchicken fillets

200mlbuttermilk

60mlHot sauce

½ tspsalt

½ tsppepper

120gplain flour

1 tspgarlic powder

½ tsppaprika
for the buffalo sauce
Instructions
Step 1
Lay out the chicken fillets between two slices of cling film

Step 2
using a rolling pin, pound the chicken to an even thickness

Step 3
add the fillets to a resealable plastic bag
Step 4
pour in the buttermilk, hot sauce and a pinch of salt and pepper




Step 5
refrigerate for at least one hour, or overnight
Step 6
combine all the ingredients for the hot sauce in a small saucepan over a medium heat





Step 7
bring to a low simmer and cook, stirring occasionally, until combined
Step 8
heat some oil in a frying pan over a medium-to-high heat

Step 9
combine the flour, garlic powder and paprika in a shallow bowl




Step 10
remove the chicken from the marinade and dredge in the flour mixture until coated
Step 11
fry the chicken in the hot oil for 3-4 minutes per side until cooked through and crisp
Step 12
toss the chicken in the buffalo sauce until coated
to serve(optional)
Step 13
mix the remaining buffalo sauce with some garlic mayo
spread onto some toasted brioche buns
top with the chicken fillets and any other toppings of choice
