For the Marinade
1 lbmeat
pork or chicken breast is best, cut into bite-sized pieces
½ cupplain greek yogurt
4cloves garlic
crushed
3 tablespoonsharissa
1 tablespoonpreserved lemon
minced
2 tablespoonssumac
2 tablespoonsza'atar
0.5 bunchcilantro
coarsely chopped

For the Sauce
Instructions
Step 1
Mix all the marinade ingredients (yogurt, crushed garlic, harissa, preserved lemon, sumac, za'atar, 1/2 bunch cilantro, juice of 1 lemon, salt and pepper) together in a big bowl and add the chopped meat. Mix well and marinade in the fridge for several hours or ideally overnight.
Step 2
Using a blender or food processer, combine all sauce ingredients together until smooth and combined. Season with salt and pepper to taste and set aside.
Step 3
If you're using wooden skewers soak in water for half an hour prior to cooking (so they don't burn). Preheat the oven to 400 degrees, or get the grill hot.
Step 4
Thread the marinated meat onto skewers alternating with onion chunks and cherry tomatoes. If you're using the oven, bake for about 30-35 minutes on an oiled baking sheet (tin foil makes it less messy), rotating the skewers every 10 minutes. Finish in the broiler for a few minutes once fully cooked, if the kebabs are not sufficiently charred. Otherwise cook on the grill.
Step 5
Serve with sauce for dipping, rice and veggies.
