Quinoa salad - Eggplants, zucchini, shallot, red and green pepper

An healthy quinoa salad with a fresh and summer taste. You can have it at home or as lunch break at work. This version is with eggplants, zucchini and peppers.

Step 1
Prepeare the vegetables first, wash and clean them. Cut them in cubes but not too small, i made the about 1cm large. Warm up a bit of oil in a wok and start cooking the zucchini. Cook them for 10 minutes, they need to be soft but not mashed. Once ready, remove them from the wok and cook the other vegetables.

Step 2
The same you did with zucchini needs to be done with eggplants, shallot and peppers. Do it one by one so you can choose the proper cooking time for each of them.

Prepeare the quinoa seeds, wash them under fresh water and boil in twice their wight of water. It should take about 15 minutes but check the package for both the amount of water and cooking time just to be sure.
Once the quinoa is ready, let it cool for 10 minutes.
You should not find any water once the quinoa is boiled but if you have any, just put the quinoa in a strainer.

Step 4
Now that the quinoa is ready, put it with all the vegetables we prepeare earlier into a large bowl. Add some spices too like salt and pepper or anithing else you like. Mix well and let it cool completely.

Once the quinoa and vegetables are cool enough, add sliced tomatoes and feta cheese. Mix and serve.
