Step 1
Preheat oven to 375 degrees.

Prick holes in all sides of your potatoes and bake directly on the rack for 1 hour. Let cool until you can comfortably handle them and cut in half.
Step 3
Turn the oven temp up to 400 degrees and cook the bacon on a foiled baking sheet for 12-14 minutes. Lay on paper towel and set aside.
Step 4
Using a spoon, remove all of the inside of the potato leaving 1/4 inch of potato in the skin. If you create any holes or thin spots, replace some potato and patch the area.
Step 5
Mix the potato pulp, 1/2 of the chive, pepper, shallot, butter, milk, cheese, and seasonings in a small bowl. Chop the cooked bacon into thin strips and add half to your filling mixture.
Step 6
Scoop the filling back into the potato skins, fill enough to create a flat surface. Don’t mound the filling or the eggs will not have a place to sit.
Step 7
Turn oven up to 450 degrees and put the filled potato skins in and bake for 10 minutes.
Step 8
Scramble the eggs. Add in the remaining chive and bacon and season to your taste.
Step 9
Top each potato with 2 tbsp of scrambled eggs.
