Sometimes, forgetting ingredients at the grocery store turns into a happy accident! I forgot a few things for my Cajun Sausage Pasta & modified the recipe a bit as I went. It actually turned out better than the original! This one pot pasta dish is so so easy, it only takes about 30 minutes to make & has the creamiest sauce with a little kick!
Here’s what I used:
* 1 box of pasta
* 1 tablespoons olive oil
* 2 tablespoons butter
* 4 andouille sausages, sliced
* 2 tablespoons cajun seasoning (less if you don’t want as much spice)
* 2 cups mushrooms, sliced
* 1 yellow onion, chopped
* 4 garlic cloves, pressed or chopped
* 2 cans chicken broth
* 4 oz cream cheese (half a block)
* 2 bell peppers, chopped
* 1 tablespoon dried basil
* 1 cup parmesan cheese, grated
* Salt & Pepper
1. Heat the olive oil in a large skillet over medium-high heat & add the sausage & onions. Cook for about 5 minutes, stirring occasionally. Add the peppers, mushrooms & garlic. Cook for about 5 more minutes. Then stir in your seasonings.
2. Pour the noodles directly into the pan & cover with the 2 cans of chicken broth. Stir to combine & place the lid on top to let the broth come to a boil. Turn the heat down to medium & let it simmer for about 10-12 minutes, stirring every few minutes. If you like your noodles softer, add a few extra minutes. If you notice the broth has all been absorbed, you can add another 1/4 cup of broth at a time.
3. Stir in the cream cheese, butter & parmesan, seasoning with a little extra salt & pepper. If you want more spice, add a little more cajun seasoning.
*If you’re gluten free, opt for GF noodles. If you’re dairy free, you can substitute dairy free cream cheese & butter and use nutritional yeast instead of parmesan.
