Cauliflower nachos
You won’t miss the chips this is so good!
3 cups Cauliflower
1 pound Ground Turkey or beef
1 packet Taco seasoning
2 cups shredded Cheese
1/2 cup Avocado diced
1 tbs pickled Jalapeño
4 tbs Sour cream
1/2 cup diced Onion
1/4 cup chopped Cilantro
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon pepper
3 tablespoons olive oil
Cut cauliflower into flat pieces. Place cauliflower onto a foil lined sheet pan add seasoning and olive oil. Mix well to coat. Bake 425° 20 minutes until slightly golden brown. In the meantime cook ground turkey with taco seasoning according to the directions on the taco seasoning packet.
Top the cauliflower with the taco meat and shredded cheese. Bake for an additional 10 minutes until melted.Top with remaining ingredients and enjoy.
