Ingredients
4 servings
2 poundschicken tenders
1 cupfrozen corn
thawed
1 cupdiced tomatoes
¼ cupred onion
diced
1jalapeno
sliced
5 stripsbacon
gluten free, cooked until crispy
3green onions
sliced
8 ozmexican cheese blend
shredded
1 x 15 ozcan black beans
gluten free, rinsed and drained
olive oil
SEASONING MIX:
Instructions
Step 1
reheat oven to 375 degrees F.
Step 2
In a small bowl mix the seasoning ingredients.
Step 3
Add a splash of olive oil over chicken the season them on both sides.
Step 4
Heat a large cast iron pan to medium heat and add a splash of olive oil. Cook the chicken for few minutes until cooked through, about 8 minutes turning few times. Remove from heat and top with the black beans, corn, tomatoes, onions, red onion, jalapeno and cheese.
Step 5
Bake until cheese has melted about 3 to 4 minutes. Remove from oven and sprinkle the bacon. Serve
