Instructions

Step 1
Heat broiler too high. Wash and dry zucchini. Trim and halve zucchini lengthwise; cut into long, thin wedges. Zest and quarter lemon if you have one.
Step 2
Toss zucchini on a baking sheet with a large drizzle of olive oil sumac, salt, and pepper (aleppo or ghost pepper optional). Broil, tossing halfway through, until lightly charred, 10 to 15 minutes. Tip: watch carefully to avoid burning.
Step 3
Remove zucchini from the oven. Toss with lemon zest (optional). Serve with lemon wedge.
