Step 1
Put 10” cast iron skillet in oven. Preheat to 500°F. Be careful not to leave in there for too long! At this temperature, you could lose your seasoning if you leave it in there for long enough. You may feel more comfortable putting the skillet in the oven 5-10 minutes before you’re ready to add the batter.
Step 2
Combine peach wedges, cinnamon, and lemon juice in a bowl. Keep in fridge until later. Put diced peaches, 1/2 cup of the granulated sugar, water into a saucepan over medium heat. When simmering and sugar is dissolved, remove from heat. Once cool, mix with peach wedges.
Step 3
Mix in the flour with the baking powder, salt, brown sugar and remaining granulated sugar (1/2 cup).
Step 4
For this next part, timing is key. Make sure the oven is preheated, and skillet is ripping hot. Quickly mix in the milk with the flour mixture. Add butter to the preheated skillet. Add batter quickly, before the butter burns. Top with peach mixture, then put into the oven. Reduce heat to 350F, then cook for 30-40 minutes until set.
