Instructions
Step 1
Boil eggs for 15 minutes
Step 2
Place eggs into ice bath
Step 3
Peel eggs and add the yolks to a bowl
Step 4
Mash yolks and season with salt and pepper.
Step 5
Add Dijon mustard and Mayo and mix well.
Step 6
Add scallions, crumbled bacon and blue cheese crumbles. Mix well until incorporated.
Step 7
Add filling to egg yolks and top with leftover bacon.
Step 8
Refrigerate until ready to serve.
