Instructions
Step 1
Steam or boil chicken (season water with salt and peppercorns).
Step 2
Reserve 2 cups stock.
Step 3
Chop meat into pieces.
Step 4
Melt butter, add flour, stir until smooth, and add reserved liquid.
Step 5
Bring to boil, stirring constantly.
Step 6
Simmer 2 to 3 minutes, remove from heat, add cream.
Step 7
Fry mushrooms, chopped shallots and red pepper.
Step 8
Add to sauce with chicken and parsley.
Step 9
Fill vol-au-vent cases with chicken filling.
