Instructions

Step 1
Place beef and stainless bowl in freezer for 15-20 minutes
Step 2
Prepare aioli
Step 3
Dice capers, shallots, jalapeno, parsley
Step 4
Remove beef and bowl from freezer. Chop beef against the grain into small uniform pieces. Place beef into chilled bowl and gently fold all ingredients together.
Step 5
Top tartare with 1 egg yolk, crispy onion chips, chives.
Step 6
Serve with toasted country bread (garlic rub, olive oil drizzle, finishing salt)
